Fair Trade

At Sketchbook Catering we believe writing a bespoke menu as the event is yours and you should be able to choose the perfect meal for your guests. If you are working to a budget, just let us know your requirements and what you are working to and we’ll make sure you will come in on line.

We also source as much local, organic and fair-trade produce as possible in addition we only use MSC fish on our menus

First Course Selection

Seared scallops, black pudding, crushed peas and cauliflower puree, mint oil.
Lobster, poached salmon mousse and lemon dressing with micro salad.
Spring green vegetable soup, tomato coulis and pesto.
Home smoked chicken, roasted beets and goat’s cheese salad, walnut oil.
Home marinated carpaccio of beef, purple sprouting salad and parmesan shavings.
Mediterranean vegetable and ricotta ravioli, vegetable nage and crispy rocket.

Main Course Selection

Home smoked fillet of Beef on horseradish dauphinoise, maderia wine and forest mushroom jus
Pan fried fillet of bream, melting onions, smoked mussels and confit ratte potatoes.
Roasted chunky cod, broad beans, chantarelle, asparagus and truffle mash.
Herb coated cannon of lamb, puy lentil, pea, mint and feta salad, olive crushed potato and red pepper puree.
Veal Holstein, breaded escalope of veal, quail egg, anchovy, spinach and Lyonnaise potatoes.
Seared rare tuna, warm salad Nicoise.

Grill section

If you just fancy a nice bit of fresh meat or fish, simply grilled and served with an accompaniment of seasonal vegetables and potatoes or salad, we will endeavour to source to your needs, cook it how you want and serve it with what you want.

Some ideas – Whole lemon sole, halibut, lobster, fillet steak, calves liver or lamb cutlets.

Vegetarian Main Courses Butternut squash, feta & parsley patties, tzatziki and homemade pitta.
Mexican bean salad. Guacamole, tomato salsa and sour cream with homemade tortilla chips.
Spinach, ricotta and sunblushed tomato cannelloni, basil pesto and rocket salad.
Baked aubergine, filled with vegetable mousaka. Herb and spinach salad.

Dessert Selection

Lime and coconut parfait, spiced syrup and mango puree.
Classic summer pudding and white peach cream.
White chocolate and raspberry cheesecake, framboise jelly.
Rich chocolate torte, cinder toffee and espresso crème.
Assiette of nuts; pistachio parfait, pecan tart and hazelnut and chocolate mousse.
Classic vanilla crème brulee, poached rhubarb, strawberry and champagne shot glass.
Selection of Continental and British cheese, homemade chutney with biscuits and walnut bread.

Coffee Choice of freshly brewed Fairtrade filter coffee with homemade petit fours.

The menu price includes Chefs, Kitchen Assistants and Back of House Support Staff. All table top hire, White Linen, Kings Cutlery, White Crockery, Rubbish Removal & Recycling, are all included in the menu price.

The Front of House food service team would be charged separately... An enthusiastic team with big personalities, individuals who genuinely enjoy what they do!
